5 Wholesome Salad Recipes

It’s a myth that salads are to be eaten only by those on diet. Even when not on diet, our stomach needs rest from all the junk food. It is advisable to give your digestive system a break from extra oil and fat, thus cleansing the system. It is not necessary that you have the typical boring salads. They can be made interesting by putting together your favorite food items and fruits. Salads can complement a full meal or act as a whole meal on its own. Moreover, making your own salad can turn out to be a fun filled activity. Here are a few wholesome salad recipes that are a treat to both your eyes and appetite.

1. Green beans, chicken and goat cheese salad

Blanch the green beans in boiling water for 5 minutes. Drain the hot water and dip the beans in chilled water to retain the green color. This will also prevent over cooking and make it crisp. Take 150 gms of chicken braised in garlic sauce. Take a mixing bowl and mix together beans, onions, chicken and crumbled goat cheese. For dressing, mix together 2 tablespoons of olive oil and red wine. You can enjoy this salad at room temperature or chilled.

2. Apple, avocado and mushroom salad

Here you first need to work on the dressing. Mix 3 tablespoons of olive oil, 1 tablespoon vinegar, 1 tablespoon lime juice, chopped fresh parsley and let it rest for an hour. Next step is to mix together finely chopped apple, long pieces of avocado and thinly sliced chest nut mushroom. Line the serving bowl with fresh lettuce and brush some dressing on it. Fill it with all the ingredients and pour a generous amount of dressing. Garnish with roughly chopped walnuts.

3. Sweet and sour fish, fusilli and spinach salad

Firstly blanch the spinach for 5 minutes and put it in chilled water. Braise the fish on both sides in a tablespoon of olive oil and boil the fusilli until cooked. For the dressing, take 5 tablespoons of sunflower oil, 2 tablespoons of white vinegar, 1 tablespoon lime juice, honey and mustard sauce. Put all the ingredients together and garnish with fresh basil leaves.
