4. Berries Puddings

Ingredients
125g hulled and halved strawberries, 125g mixed blackberries and blueberries, 42g fine sugar and 3 slices of white bread.

Preparation
• Take a pan and put all the fruits, sugar and add 1 ½ tablespoon of water. Keep on heating the mixture until the juices are drawn out of the fruits and then remove it from the heat.

• With the help of a biscuit cutter, stamp two circles of 5.5 cm and two circles of 7cm from the bread.

• Take a 175ml pudding basin and place the 5.5cm bread circle at the base and put the fruits over it and top it with the 7cm circle.

• Color the bread circles with fruit juice.

• Wrap the whole stuff with a cling film and put it in a refrigerator for 5 minutes.

• To serve, reverse the puddings on the serving plates and then spoon the juice over.

5. Apple and elderflower jellies

Ingredients
5 sheets of gelatin, 150ml of elderflower cordial, 500ml of sparkling white wine, 100g of apple slices, 25g blueberries and 100g low fat elderflower yogurt and apple.

Preparation
• Soak the gelatin leaves for 5 minutes in cold water.

• Put the cordial in a small sauce pan and heat it slightly and then add the wine.

• Take out the gelatin leaves from the water and add it to the cordial wine. Leave the mixture until it gets cold.

• Take four glasses and divide the jelly and add the fruit. Leave it in the refrigerator to set overnight.

• To serve, decorate with the blueberries after spooning the yogurt onto the glasses.
