7. Mexican Hot Chocolate

Ingredients:
3 cups milk (not skimmed milk)
3 oz. chocolate bar (dark or bittersweet)
1/4 cup granulated sugar
1 vanilla bean (split from the center)
Pinch of salt
1 cinnamon stick
Miniature marshmallows, for serving
6 cinnamon sticks, for serving

Preparation:
1. First, break the chocolate bar into small pieces. Then place the bar in a pan.
2. Add the milk and cup of sugar in the pan.
3. Scrape the sticky seeds form the vanilla bean using a plastic spoon. Add this and the cinnamon stick to the pan.
4. Put in a pinch of salt and keep the pan on the stove. Heat all the ingredients on low heat and keep stirring continuously. This is to avoid burning of milk or chocolate. Do this until chocolate is melted.
5. Now add a cinnamon stick to each mug and then pour the mixture into all the mugs.
6. Lastly, garnish the mixture with 2-3 marshmallows for each mug.
