Thanksgiving is the day when we gather with friends and family for a big hearty meal and give thanks to what we have been blessed with. The holiday itself may have had colonial origins, but it is all about celebrating the true essence of giving thanks that makes it truly special. 1. Pumpkin soup

Perhaps the easiest dish to make with pumpkin; this has remained a staple in almost all homes for a lot of years. It is quite easy to make too. Squash the pumpkin, boil it with water and add the necessary spices to it and you have a great tasting soup. Add a lot of cheese shavings and sprinkle it with nuts to make it more interesting. You can make it bland, sweet or spicy depending on your tastes or that of your guests.

2. Pumpkin Pie

Another regular of the holiday menu, a year would be incomplete and the season needing a little more if you do not bake a pumpkin pie. Like the soup, it is a very simple preparation and can be prepared quickly with a lot of ease. You can bake the regular pie and get creative with the toppings or try baking the pie in a different mould to make it look like something else.

3. Mac and cheese with pumpkin

Why not add a bit of pumpkin to the regular Mac and cheese? If peeling and cutting a pumpkin to add to the Mac and cheese seems like a lot of work, just get the canned pumpkin from the nearest store and add it to the mix. This gooey dish with lots of cheese and a touch of oregano and the pumpkin flavor will sure become a favorite pretty soon with the family.

Make an energy filled granola bar with crunchy pumpkin seeds and other grains of your choice. Not only do they give you instant energy, they also taste great. You can pack it with you for a quick bite or have it as a breakfast. You can also make it a meal by adding fruits and sauces to the granola bar.
