3. Tomato and garlic winter soup

Ingredients:

8 fresh tomatoes, chopped after removing seeds
8 cloves of garlic, peeled
4 cups – chicken broth
1 red chili pepper
¾ cup – virgin olive oil
1 tbsp – fresh mint, minced
1 tsp – dry basil
½ tsp – salt
Pinch of ground pepper

Preparation:
Grind the cloves of garlic with red chili pepper until a paste is formed. Once that is done, pour a little olive oil in a skillet and heat it with the garlic paste for 5 minutes. Add the chopped tomatoes, mint, basil, salt and pepper. Pour the chicken broth over this and bring to boil. Take it off heat and serve it with bread sticks.

4. Lentil soup

Ingredients:

1 cup – rinsed lentil
4 cups – chicken stock
2 sliced carrots
3 cloves of garlic, minced
1 diced onion
½ tsp – dried thyme leaves
Seasoning of salt and pepper

Preparation:
Though this soup takes a long time to brew, it is very simple, light and delicious. Put in all the ingredients in a suitable pot. Put the lid on and let it cook for about 8-9 hours until all the components are tender.
