3. Beets, Spiced Quinoa and Yogurt

Ingredients:
3 cups cooked quinoa (red or regular; 3/4 cup uncooked)
5 to 6 roasted beets, yellow, red or a combination; peeled and sliced
1 cup drained yogurt
2 tbsp. extra virgin olive oil
1/4 tsp. freshly ground nutmeg
1/2 tsp. ground cinnamon
2 allspice berries, ground (about 1/8 tsp. freshly ground allspice)
3 cloves, ground (1/8 tsp. freshly ground cloves)
1/8 teaspoon freshly ground cardamom seeds
1 tsp. freshly ground coriander seeds
2 garlic cloves
Salt and freshly ground black pepper to taste
1/4 cup chopped walnuts

Preparation:
1. Preheat oven to 350 degrees Celsius and grease the baking dish.
2. Take a saucepan and heat olive oil and all the spices. When there’s a sizzling sound, put the cooked quinoa.
3. Stir for a minute and remove from the burner. Add salt according to taste, then spread it evenly in the baking dish.
4. Place the roasted beets on the quinoa. Add little olive oil and bake in the oven till it becomes hot.
5. Then pestle the garlic in a mortar along with salt. Stir it into the drained yogurt.
6. Remove the baking dish, add a generous quantity of yogurt on top of it.
7. Garnish with walnuts and serve.

4. Leek and Cheese Crumble

Ingredients:
500 g leeks
1 tbsp whole grain mustard
100 ml single cream
400 ml light vegetable stock
30 g shelled hazelnuts
2 tbsp roughly chopped parsley
100 g white breadcrumbs
125 g caerphilly or cheshire cheese, finely grated or crumbled

Preparation:
1. Cut leeks into thick circles of about 2cm. Keep them in a saucepan and add mustard, cream and stock to it. Cook for 15 minutes till the leech starts turning soft.
2. Preheat the oven to 200 degree Celsius.
3. Transfer the mixture into a baking dish, except 2-3 tbsps of the pan juices.
4. Grind the hazelnuts, parsley and breadcrumbs together in a food processor until they are finely chopped.
5. Sprinkle the parsley mixture and cheese over the leeks. Pour the saved pan juices on top.
6. Keep it in the oven for 10-15 minutes. Wait till the crumble toppings are golden and crisp. Serve hot.
