1. Tomato and Spinach Soup
a. Take a soup pot and add some olive oil in it.
b. Add some garlic, finely chopped onion and some celery.
c. Fry until they become soft.
d. Now add some oregano and thyme on top and stir.
e. Next, add crushed tomatoes to the pot. It is also a good idea to add some diced tomato. Then add vegetable broth, spinach and basil.
f. Bring the mixture to a boil.
g. Let the soup simmer in reduced heat for 20 minutes or so.
